Yes, there is eating before the big eating holiday.Okay people, it’s game time. T-minus 48 hours until the big Turkey day and you’ve got a whole two days worth of eating until your body is ready for mountains of Buttermilk Mashed Potatoes. The goal of this ‘pretox’ (the opposite of a detox) is to prep yourself as best as you can by consuming more vegetables and whole grains and balancing out the pats of butter you’re definitely going to put all over those freshly baked Honey Whole-Wheat Pull-Apart Rolls. We all partake during the holidays, it’s cool. In the interest of full disclosure, this meal plan is just a guide; our nutrition experts cannot back the health benefits of an Internet created term such as ‘Pre-Tox’. If anything, we hope to provide a framework for getting you ready for the holiday of eating, sitting, and eating again.

Two Days Ahead - Breakfast

It’s going to be a big week, do yourself a favor and treat yourself to some breakfast tacos. Opting for the smaller, whole wheat tortillas makes you feel like you’re getting more bang for your breakfast buck. Plus, packing more vegetables into the egg scramble makes the cheesy sprinkle go farther.

Two Days Ahead - Lunch

You’re probably slammed at work trying to finish up before the holiday weekend, but you know that nothing is getting done. We’ve got you covered to power through the never ending pile of emails: yes, it’s kale salad.

Two Days Ahead - Dinner

Remember that rotisserie chicken you shredded for lunch? Let’s make it easy on ourselves and make a 4-ounce portion of rotisserie chicken the main for dinner, too. The accompanying side will be doubled up for lunch tomorrow, because you are just that efficient and awesome. Drizzle the bacon syrup over your chicken to incorporate the whole dish.

One Day Ahead - Breakfast

If you’re an early riser, get a jumpstart on today’s prep for tomorrow. Go on and toast bread cubes for Classic Herb Stuffing and cut up vegetables for Sheet Pan Roasted Vegetables. Now that you’re the ultimate Thanksgiving superstar, get yourself in a zen moment and focus on the the most important part of your morning: coffee. Give yourself a moment to breathe before your family descends upon the kitchen. Treat yourself to a Chocolate Oatmeal Latte- yes, you can sip it or spoon it.

One Day Ahead - Lunch

You’ve got this covered, remember? You did all that prep last night for today’s lunch to save yourself a moment of panic. Heat up the rest of your Brussels Sprouts, Sweet Potato and Apple Harvest Hash in the toaster oven or microwave. If you need an extra boost, a spoonful of 2% greek yogurt with a splash of lemon juice will jazz up the leftovers.

One Day Ahead - Snack

Stay on track with bright flavors and creamy, protein-packed yogurt. You’re going to be opting for rich pumpkin pie for breakfast on Friday, so you might want to get in the good probiotic cultures while you can.

One Day Ahead - Dinner

No matter where you are in the USA, there is likely a Turkey Trot or other Thanksgiving 5K organized near you! Getting up early and moving and shaking is an excellent idea before the festival of feasting, so prepare tonight by loading up on some carbs.

Thanksgiving Day - Breakfast

It’s been a long and exciting week. On Monday, out of nowhere, we ended up taking in an abandoned kitten. We’ve wanted a pet for a long time, and were waiting for the right time. But there is usually never a perfectly right time…sometimes the universe decides to put something in your path. It took us a few days to cement the idea in our minds, but we’ve come to the conclusion that we’re totally ready to keep and raise this kitty! Her name is Q, as in the Star Trek Next Generation character (I know what you’re probably thinking, nerd-alert!–you should have guessed that from my Bantha Milk Hot Chocolate recipe). She appeared out of thin air into our lives, and everything is mostly the same, but a lot different too. She’s brightened our home up and we’re having so much fun learning how to take care of her. It’s been a whirlwind week.

I’ve been a little stressed from work and the new responsibility. The byproduct of this is that I’ve been eating a lot of sugary foods, which brings me to why I decided to try a short, easy, detox for a few days before Thanksgiving. I found the recipe for Kitchadi from Ekhart Yoga, Irina Verwer shares her lovely Easy Detox Kitchadi recipe and let me tell you, it’s truly simple to put together, and tastes great. I’m not sure how much I’ll love it once I’ve eaten it every meal for 4 days, but at day one, it’s delicious. I didn’t follow Irina Verwer’s recipe exactly. I made a few small modifications and it still came out wonderful!

Even if you don’t plan on eating this for every meal as a detox, it’s a wonderful dish. Give it a try. It’s vegetarian, full of green vegetables, and spices, and warming for a crisp Autumn night.

“If you’re looking for a detox or cleanse but you can’t take time away from real life you can use this dish. You simply eat kitchadi, and only kitchadi, for between 2 to 7 days depending on what your body needs. There’s no fasting or complicated things to prepare, so it’s easy to fit into your normal routine or when you’re under extra pressure. You will still get the benefits of the detox while still eating!

You need to soak some of the ingredients overnight and then you can make a big batch for the whole day. Eat kitchadi in place of all meals and snacks but only eat when you feel hungry. Drink just water or herbal teas during the detox. “

It’s also recommended that you only eat when hungry and chew mindfully. Experiencing headaches or moodiness is typical of a detox. To ease these unwanted symptoms drink more water.


Stomach Preparation

Next up, you’re going to need to focus working your way up in volume. Eat through the pain and give up those dreams of a six pack now- focus, we’ve got goals. Each meal you eat counts, so smashing on your plate until you’re legit full is the goal. Repeat this exercise over more than a few days and your stomach capacity should increase a little. Every little bit helps.

Here are our tips for how to make the prep count:

  • Proper daily pacing is key: Stop before you feel sick.
  • Mix savory foods with sweet: Switch it up to keep your tongue guessing.
  • Forget any flavored drinks unless they’re zero calories: Drinks with little or no flavor actually help cleanse the palate a little and cut into the massive amounts of salt used for the Turkey Day spread.
  • Booze in smaller intervals: A small amount can help to enhance your meals- but be smart, you don’t want to be in the midst of a Bukowski-style bender prior to game time.

Taste aversion is a brutal fact and a legitimate risk during this type of intense competition prep. Plus you’re going to look like a tool if you’re crying in front of the Whole Foods hot bar because you can’t deal with the smell of mashed taters. On that note, get some reps in and incorporate small amounts of Thanksgiving-style foods into each meal to help you get used to the tastes and smells you’ll be dealing with on the big day.

I’m looking forward to tomorrow and seeing how I go on only juices (on my Pre-cleanse diet I have been having a green smoothie for breakfast, kale salad for lunch, puréed veggie soup for dinner and I have replaced my morning and afternoon snacks with juices). Today I’m at work all day so I brought these drinks with me as well as a yummy kale salad.

Last year I was so focused on shopping the deals, I forgot one very important necessity that I needed. I did it on my own using the Warby Parker website. They also would not accept my insurance despite telling me they could over the phone and prior to the start of my appointment.

Post-Thanksgiving Lentil Soup

Actually, I suppose that should be pre-Thanksgiving lentil soup, because I cooked a big pot of this delicious, vegetable-laden goodness last Tuesday for my office as a little pre-holiday celebration and also to sort of cleanse our palates for the big feast that was to come in just a few days. But I think the Saturday afternoon after the crumbs from the herb rolls, apple pie, corn bread stuffing, and mushroom galette have been swept away would also be the perfect time to slow down and have a bowl of this simple, nourishing soup.

My office is pretty neat in that we have an enormous, light-filled kitchen with a Wolf stove and all the various cooking accouterments you could wish for. I’ve baked pies and other coworkers have made latkes and sometimes we take food up to the roof where we’ll have a barbecue — and this is all at work. I am fortunate enough to have coworkers who not only encourage me to indulge in my penchant for cooking but will eat nearly everything I make willingly and, dare I admit it, fairly happily. We had some mushrooms and carrots leftover from a previous salad-making in our communal fridge and I thought it would be grand to use them up in a soup. I posited making a split-pea but a few, ahem, weren’t so keen on that idea so I’ve filed it away for when I’m back in my own little home kitchen (Sunday night, perhaps, I can finally make myself a nice, stewy, spinachy pot of those bright green legumes). Lentil, I thought. Most everyone likes lentils (and, I must add here that the one coworker who previously professed not to enjoy them very much did actually eat her entire bowl) and they’re cheap and quick to cook.

So in between a few edits I sauteed onion and garlic, dumped in lentils, and crumbled bouillon. Another coworker made corn bread muffins, and I’d brought in a pumpkin pie. People wandered in and out remarking on all the good smells, and around 12:30 we all convened in the kitchen to sit down to hot, brothy bowls of soup, munch on muffins, and cut thin slices of pie.

Legumes are the vegetarian’s saving grace — all that protein, all that calcium — and there are so many ways to prepare them quickly and healthfully. Lentils are perhaps one of the fastest to cook, as they require no soaking in advance, and if popped into a pot of soup the cook can wander away to have a cup of tea while they simmer toward silkiness — or, if you’re so inclined, do a bit of work at the same time.

Lentil Soup

2 cups lentils, rinsed
8 cups water
1 cube vegetable bouillon

1 tsp. salt
1 tsp. pepper
1 tsp. dill
1 onion, chopped
5 cloves garlic, sliced
1/2 pound spinach
2 carrots, chopped
10 mushrooms, sliced
1 can crushed tomatoes
olive oil

In a large pot over medium heat, sautee the onion and garlic in a few tablespoons of olive oil until translucent, about 5 minutes. Add the mushrooms and carrots, adding a little water if necessary so they don’t stick, about 5-10 minutes. Add the salt, pepper, and dill and stir. Add the lentils and stir a few times, then add the water. Crumble the bouillon and add. Bring to a boil then lower to a simmer. Cover and let simmer for about 20 minutes or until the lentils begin to soften. Add the spinach, tomatoes, and more salt and pepper to taste. Cook about 10 minutes more.


Gingerbread Pumpkin Trifle

This past Thursday we were invited to attend a pre-Thanksgiving dinner with friends. It is such a fun evening filled with good times, laughter and amazing food! Everyone brings their favorite and best side dish or dessert to share.

This year I made a pumpkin trifle, which has now become my new favorite go-to dessert. It is so simple to throw together! I made the cake and pumpkin cream cheese mixture the night before.

A few hours before our party I whipped up homemade organic whipped cream, layered the dessert and topped it off with chopped pecans.
