A dish very appreciated by Romanians: chicken ostropel, served with polenta. It is ready in a maximum of 40 minutes.

Ingredients

  • 1 kg chicken
  • 2 medium onions
  • 150 g peeled tomatoes in tomato juice
  • 4-5 cloves of garlic
  • 1 bay leaf
  • 1-2 tablespoons of wine vinegar
  • oil, salt and pepper to taste

Method of preparation

For chicken ostropel, cut the meat into appropriate pieces (so that it can penetrate better when fried). Then drain (or line with a napkin) to dry and fry in a hot pan with oil.

Meanwhile, chop the onion, garlic and, separately, the diced tomatoes.

Add the chopped onion and a pinch of salt to the pan where the chicken was fried, and after the onion has hardened only slightly, quench with a little water.

Bring to a simmer until the meat is tender and the onion is soft.

Then put the diced tomatoes, tomato juice, finely chopped garlic, bay leaf and half a cup of water in which the vinegar has been diluted. Match to taste with salt and pepper.

Cover the chicken tinsel and simmer until the meat softens and the sauce drops and binds a little. Add greens and serve with polenta.

Chicken ostropel ingredient

We fry them in oil, on both sides, but not at all, but just enough to brown them slightly. Add the crushed garlic and leave it to release its flavors. Do not let it burn because it will become bitter and spoil all the taste of ostropel.

Add the tomato sauce and leave it for 1-2 minutes. I recommend using homemade tomato sauce to get a tasty ostropel.

Add enough water to cover the cups, add salt, pepper and bay leaves and simmer.

When the meat is well cooked and the sauce has dropped, prepare the rantas from the flour. In a glass, dissolve the flour with a few tablespoons of cold water, then add the pasta obtained in the sauce, stirring constantly. Let it boil for a few minutes, until the flour is cooked and the sauce thickens. It is not mandatory to use rantas, I wanted to make it exactly as our grandmother did, you can boil the ostropel until the sauce becomes more consistent.
Set aside and add the finely chopped dill. From my point of view, we must have polenta and pickles!
